Omg I was worried that it was gonna be really time consuming but it was well worth it the most amazing curry ever!! I loved it!! I didn’t have tamarind so I left it out but it still tasted so good!! Thank you again your recipes are always on point and sooo delicious!

Fabulous! I did have to use a few of the listed substitutes (as I do not have access to a few listed ingredients) but regardless, this dish is a winner! The potato’s add a creamy element which I wasn’t expecting (I used petite Yukon golds). One recommendation I did was to make a large quantity of the yellow curry paste, I had all these fresh ingredients so why not use them?? I divided the paste into several jars and froze the excess (about 1/2 cup per jar). When I made this recipe again, I used one from the freezer and taste remains incredibly! Plus, it definitely simplifies this recipe when your paste is already made!! Thanks for this great meal, we will continue to enjoy this for years to come! Absolutely delicious!!

Brilliant recipe. Curry paste is a lot. Could easily double protein, chicken stock & coconut cream.
