I made this for dinner this evening using chicken breast. It was as fast as listed, and the key is having everything prepared. I’m not a fan of sage so I made half with sage and half with basil, thanks to the many reviewers who noted the basil. I cut the chicken 1/3″ and it cooked up juicy and tender. This is a keeper. I’ll prep the chicken and proscutto and freeze it so these are almost ready to cook when thawed and the proscutto will be fresh.

My family members rate this #1 out of the many, many dishes I have cooked from this site (tied with chicken satay).
FYI the scaling on this dish is wrong – it multiplies the number of steaks and the grams.

This was definitely a recipe served in the restaurants in Rome this past summer. My husband kept ordering it. It is served with a side of roasted potatoes.
