I am a German living in Australia wanting to host an Oktoberfest dinner for friends and decided to trust National with her recipe and method, which is very different from the traditional German way of preparing and it worked out a treat. Bit of effort to pierce the skin and thread the skewers through but absolutely worth it, the crackling was absolute perfection, the meat juicy and full of flavour! AMAZING! Thank you Nagi for giving us the confidence to cook more complicated meals with ease. Love your work!

Nagi you’ve knocked it out of the park. I followed your instructions to get super crispy crackling and delicious tender meat. Perfect meal for 2 of us and some leftovers for tomorrow

I haven’t made this yet but I’m sure it be in the rotation. Considering if I could use a facial micro needle roller for pricking the skin. It would be faster and insure the depth of the holes.
